A cat 5e cable is made up of four pairs.
You should have one pair on pins 1 and 2 another on pins 3 and 6 another on pins 4 and 5 and the last on pins 7 and 8.
The plastic jacket is suppose to be crimped inside the jack it help prevent the wires from being pulled loose.

If the wall jacks are using the more standard wire colors you have the brown and orange pairs swapped.
The cables are not terminated or connected to a switch thus all of the additional wall jacks are a dead end.

Each jack should have a cable that is running to a central location.
